You may use the Save All and Close All commands to save and close all open windows respectively:

Command-Option-S

Save All documents

Command-Option-W

Close All windows

Note that Close All does not close the Worksheet and the workset windows.

When you bring up the Open panel using the Open command, it remembers the last directory you were opening from and reopens in that directory. You may instead prefer to have the Open panel switch to a directory enclosing a particular document -- to do that, activate that document and use "Open in this directory":

"Reopen in Preferred Editor" is a command handy when for instance working on an html document -- with the document open in Eddie, use the command to reopen that same document in Safari:

Document List

The "Open Documents" (Command-Control-0) window is a handly tool for managing the list of all the open documents.

It is particularly useful in situations where you find yourself with a huge stack of open source files and want to close most of them but keep a handfull open. The "Open Documents" window lets you achieve that much faster than by activating one document at a time and closing them. You can simply scan down the list, clicking the close box next to the files you no longer want to have open.

Additionally the document list lets you arrange and re-arrange documents into stacks of tabs simply by dragging one or multiple documents on top of another.
